
Arabic Style Lamb Curry

Ingredients
500g diced lamb
1 large onion
2 Tbsp ghee
2 tsp ginger and garlic paste
4 fresh tomatoes - peeled and chopped
1/2 handful of fresh mint
Handful of fresh spinach
1 tsp coriander powder
1 tsp cumin powder
1 tsp salt
1/4 tsp black pepper
1 tsp garam masala powder
1 tsp curry powder
1 tsp turmeric
Method
1. Heat pan over a low / medium heat, add the ghee and melt
Add the onion, ginger and garlic paste and cook for 5 minutes
3. Add the lamb and brown on all sides
4. Add all other ingredients, mix and stir fry for 1-2 minutes
5. Add enough water to allow it to simmer for 1-1 1/2 hours
6. Serve with rice and naan.
